Ingredients

  • 8 Oz sea bass
  • 4 FL OZ Lime Juice
  • 1 Fresno chile
  • 1/4 cup mustard seed
  • 1-quart watermelon rind
  • 1 cup of water
  • 1/2 cup canola oil
  • sea salt.
  • 4 fl OZ lime Juice
  • 4 FL OZ Lime Juice
  • Black pepper
  • 1tsp sumac
  • 1/2 cup apple cider vinegar
  • 4 OZ pork chorizo
  • radish to garnish

Cooking Instructions

Add a thin slice of sea bass, juice of three limes, juice of an orange, Fresno chile sliced, a teaspoon of sea salt, and a teaspoon of sumac in a plastic bag

Close the bag and let in the fridge to chill for over 30 minutes.

On a pan medium heat cook your chorizo with your canola oil.

Use a fine sieve to remove the chorizo and keep with oil. let it cool in the fridge for about 30 minutes.

Remove the rind from the watermelon and diced it. you will need the equivalent of a quarter of a watermelon.

In a pot add 1/2 cup of the apple cider, 1 cup of water, sea salt, 3 tablespoons of sugar, pepper, and mustard seed.

Bring everything to boil and pour the liquid to the watermelon rind.
