My name is Eddy Guillemain. I was born in Versailles, near Paris, to parents who were in the restaurant business. My father was a successful chef with his own restaurant, and ever since I was little I have worked alongside him. I have always been passionate about food and service. When I was 21, I decided to pack my bags and travel. For almost 10 years I traveled between Australia, Asia and the United States as well as all of Europe. I have worked for different restaurants and hotels — with experience in the five-star gastronomic service to the traditional restaurant. I have had the opportunity throughout my years in the industry to be able to increase my creativity. Now, I live in New York and I’m determined to use all my qualities and my experience in the service of others.
Healthy eating means eating a variety of foods that give you the nutrients you need to maintain your health, feel good, and have energy. These nutrients include protein, carbohydrates, fat, water, vitamins, and minerals. Therefore I love to shop local. In manhattan, there are two local farmer’s markets that I love to purchase my products for this simple reason. First I help directly local business. 2nd of all their products have no pesticide or other chemicals in their food. Finally, I love to talk to people and learn from their backgrounds and the way they cultivate their products.
I truly love to spend hours in my kitchen and to work away on my next recipe. The smile of my wife or my friends whenever they come to our place for lunch or dinner gives me so much satisfaction. If I am not happy with one of my recipes I start it again and I try to find out what I can do to make it perfect next time. Sometimes it take me days because I do not want to give up, but the result is my happiness.
Always looking for the best taste and combination of products
Before I start any recipes, I begin in my imagination and my notebook. I do a lot of visualizing and brainstorming, to figure out the best recipes for each mood or season or guest. I spend hours and hours on the internet, youtube and talking to other chefs to learn from others experience from around the world. You cannot be a good chef if you do not learn from others. Knowledges come from years and years of research, preparation, tasting and passion.
